The collection of office and warehouse buildings located just south of the interchange of Sixth Avenue and I-70 doesn’t exactly scream “cool and comfortable night out.”

But Cindy and Kyle Pressman hope the bland and even gruff nature of that location will actually work to their advantage as they aim to make it just that — a “night out” destination spot.

“When it gets later and its dark and the parking lot is empty and its dark and its kind of a unique space,” said Kyle Pressman. “And I think that actually plays to our favor where people will be like `am I actually going to a real spot?’ and then they walk in and they are like ‘oh, this is actually really cool.”

The “it” Kyle is referring to is the atost Lounge, a small and sleek space where customers can sample the Pressman’s own take on the beverages that are most popularly consumed as a before-dinner drink in France and Italy — referred to as apéritifs and apertivos respectively.

Cindy said she and Kyle began learning about aperitivos after realizing they had differing tastes when it came to alcoholic drinks that often made enjoying one together difficult.

“I’m not a big drinker but when I do drink I like to drink white wine while Kyle usually grabs for a spirit,” said Cindy Pressman. “So that just meant for me that I would end up pouring myself a glass but the whole bottle would go to waste or I would end up drinking more than I wanted. We wanted a drink we could both enjoy together.”

Given that interest, the idea of apertivos — which Cindy said are often sipped on over a long period of time with friends — had a natural appeal. But there was one problem.

“We fell in love with everything about it except the liquid,” she said. “They are very bitter and high in sugar.”

So they decided to try their hand at producing their own brand of spirits that are lower in sugar and less bitter than traditional aperitivos and can be enjoyed on the rocks.

Their resulting line of atost spirits, produced entirely at the Golden facility, are produced from a base of a spirit that is made by distilling grapes to a high alcohol content. That spirit is infused with several ingredients that provide varying flavors and then mixed with a chardonnay that has been further fermented with honey and sugar.

“We like to say it’s a spirit for a wine lover,” said Cindy Pressman. “So it drinks more like a spirit but has the mouthfeel of a wine.”

Currently, atost offers three different spirits that they liken to representing phases and parts of a plant.

The Roots spirit is “Earthy, herbaceous and where the plant starts” while the Bloom spirit is floral with hints of rose hibiscus and juicy strawberry according to Kyle Pressman

“It’s like a spirit version of rose” he said.

The taste of the Citrus spirit, meanwhile, is more self-explanatory.

Because atost’s products are legally considered wines, they can be ordered on the atost website and mailed directly to one’s home.

However, bottles can also be purchased at the atost lounge, where those looking for a lounge experience can also order them on the rocks, with a splash of champagne or mixed into one of several cocktails.

“We want this to be kind of an experiential space where we can bring people in and tell them a story but also give them a really cool, intimate experience” said Kyle of the lounge, which offers a view into the spaces where the spirits are produced. “It’s kind of a speakeasy experience which is kind of fun.”
